This naturally conditioned cider takes the juice of traditional cider apples like Yarlington Mill and Sheep’s Nose bittersweets and undergoes the keeving process that is unique to cider and perry. This enables us to have more control over the ferment and to bottle the slow fermenting cider so that it will continue to give a mousse like sparkle in bottle. A glorious expression of the bittersweet cider apple.

Take the aroma of ripe bruised autumn fruit with freshly made hay that leads to a cider with ripe red apple character with hints of barn. Full in the mouth and a long lasting flavour with a hint of bitterness in the finish keeping the cider fresh.
