This 2024 blend of perry pears from the finest 6o year old trees in a high stem traditional orchard, sweat them, sort them, mill them, allow the briefest of macerations and then press, follow with a keeving and 3 rackings and then let the native yeasts do their thing and you have a slow fermenting  juice fit to bottle at SG 1.020 that will continue to ferment in bottle to stop when the CO2 fills the headspace and the perry itself and then the wild yeasts relinquish their desire to reproduce and settle for a good creamy fizz and an expression of the fruit that does credit to all concerned. In bottle conditioned perry full of ripe melon, elderflower, a touch of honey and bags of citrus and gooseberry and rhubarb.
