The 2024 blend of perry pears from the finest of semi standard trees in the 1977 orchard, sweated, sorted, milled, the briefest of macerations and then pressed, followed with a keeving and many rackings and letting the native yeasts do their thing and you have a slow fermenting juice arriving at the perfect sweetness to bottle at SG 1.028 , when the perry is filtered, carbonated and then pasteurised in bottle, to give this wonderful sweet, rich, unctuous perry, full of melon and tropical fruit with a touch of rhubarb and ginger.
